4 to 6 Russet potatoes (about 1 kg) - boil in salt water with skin - remove skin after
150 gms sharp Cheddar Cheese (I use Bega or Coon) - coarsely chopped
10 chives - chopped finely
1 yellow onion - chopped finely
2 to 3 cloves garlic - chopped finely
1 stalk parsley - chopped finely
1 to 2 eggs
a wee bit of salt (cos Cheddar is already salted)
lots of black pepper
Italian herbs, if like
some chilli powder or paprika, if like
additional cheddar cheese (about 50 gms) - grated
some olive oil
some milk
Preheat oven to 200 deg C.
Grease a baking dish (about 4 in X 8 in) with olive oil.
Mix hot, boiled potatoes with cheese, chives, onion, garlic, parsley, Italian herbs, chilli powder, eggs, salt and pepper well. Add some milk if too dry. I use my new Kitchen Aid - easy peasy!
Pour mixture into the greased baking dish, top with extra cheese and bake till top is browned (about 20 to 25 mins).
Serve hot with a green salad and some BBQ meats. We like it with gravy sometimes.
